Soak – 1 cups quinoa – ¼ cup chia seeds – 1¼ Cup Water overnight
Mix – Soaked items – ¼ Cup Olive Oil – ½ tsp Baking Soda – ½ tsp Salt – 1 tbsp. Lemon Juice – (Or Quick Blend – thick coarse batter) +/- extra water if needed.
Pour – Batter – Baking Pan – Mix and Garnish – Handful Sunflower seeds – Pumpkin Seeds.
Bake – Preheat oven – 160 C – 90 minutes.
Cool – Before slicing.
Note : Lemon Juice is important to activate the baking soda. Add Ghee instead of Olive Oil.

Recipe for Cabbage Thoran a favourite side dish of Kerala Cuisine. A Stir Fry with Cabbage and Grated Coconut
Garnishes play an important role in food presentation. It can be defined as “Food items placed around or on top of a principal dish for a relish”. A careful selection of garnishes that have flavour, colour, and eye appeal is appreciated and is accepted as a finished dish.
In this post we are doing cabbage thoran/ mild spiced sautéed cabbage in an arc shape. Arcs add fluidity and a sense of motion to a presentation.
Cabbage Thoran is one of the favourite side dish of Kerala Cuisine. Any Kerala Sadhya is incomplete without Cabbage Thoran. Cabbage Thoran is a stir fry made using cabbage and coconut.

Cooking time – 20 minutes
Ingredients:
Cabbage : 500 gm finely chopped
Grated coconut : 1cup
Green chillies : to taste

Khajoor ki Chutney – Dates Chutney
Chop – De-seed and Chop 250g Soft Dates – Small pcs.
Soak – Tamrind (Tennis ball Size) in 1 cup Hot Water – Extract juice
Heat – Pan – 2 tsp. Oil – Low Flame – 1/2 tsp Cumin Seeds – 1/2 Fennel Seeds – 1/2 tsp. Ginger Powder – 1tsp. Chilli Powder – Quick Stir
Saute – Dates – in above – 3-4 mnts – 1 tsp. Salt – Low Flame
Cook – Pour Tamrind Juice to Saute – Pinch of Sugar Bring to Boil – Till Dry and Oil has started to realease – Turn off Stove – Done
Delicious Chutney to Enjoy with Pilaf or as Dip or Sauce for Snacks. Yummy!!

Easy Veg Ratatouille
Chop – 2 Onions – 4 cloves of garlic – 2 aubergines – 2 courgettes – 2 Sweet Red Peppers
Saute – Heat pan – 2 tbsp. Olive Oil – Onion – Garic – 1 mnt – Add rest of the Veg – Salt to taste – Saute till Soft and Done
Spice – 2 tsp. Sweet Pepper Powder – Stir Well – 6-8 chopped Tomatoes – Bring to Boil – 3 mnts – Pinch of Sugar.
Garnish – Hand full Fresh Herbs (Basil or Coriander) – Drizzle Tsp. of Olive Oil – Turn off Stove done.
Serve with Rice or Bread. Delicious Quick and Easy

Ethakka Vattayappam / Rice Cake with Plantain – Microwave Recipe
Chop – Peal – 1 Plantain – cut in Cubes
Sauce – Mix 1 tbsp. Rice Flour- 1/2 Cup Water – 2 Cups Coconut Milk – 2 tbsp. Sugar – Pinch Cinnamon Powder – Stir Well – Bring to Boil – 2-3 mnts – Slow Fire – Turn Off Stove
Batter – Mix – 1 Cup Rice Flour – 1 Cup Finely Grated Coconut (fresh or Dry) – Pinch Salt – +/- 1 Cup water – 1/2 Cup Sauce – 1 Drop Vanilla Essence – Thick Pouring Consistancy
Microwave – Pour Batter – Flat Bottom – Greased Dish – Decorate Chopped Banana – Sprinkle Pinch Cinnamon – +/-7 mnts. – Out of Microwave – Rest 5 Mnts.
Slice and Serve Hot of Cold with rest of the Sauce.
Note : Use Cardamom powder instead of Cinnamon. Use Jaggary instead of Sugar. Substitute Coconut Milk with Regular milk. Steam Cake 15 -20 mnts instead of Microwave if preferred.

Saag Aloo / Potato Spinach Curry
Blend – Boil 1 cup water –Add 250 g Spinach – 4 mnts – Drain – Cool – Grind to Paste.
Microwave – 4 medium Potatoes – 6 mnts – till Soft – Peel – Cut Bite Size Pcs.
Saute – 1 tbsp. Oil – 1 chopped Onion – till translucent – Low Flame
Stir – Add to above – 1 tbsp. Dried Fenugreek Leaves (Kasuri Methi) – 1tsp. chili powder – pinch garam masala – 1 tsp. Salt – Mix well –
Boil – Add 1 cup Tomato Puree to above – Bring to Boil – Add Spinach Puree – Continue Boil – Chopped Potatoes – 1 Cup Cream – 2-3 Mnts. – Turn off Stove Done
Serve Delicous Saag Aloo with Rice or Chapati.
Note – Adjsut Salt and chili to taste. Boil Potatoes instead of Microwave.
Quick and Easy Indian Saag Aloo Recipe / Potato Spinach Curry to serve with Rice or Chapati
Kanji Payar Chammanthi – Rice Porridge Green Lentil and Coconut Mango Chutney
Rice – 1 cup Brown Rice – Wash – Cook -5-6 cups water till soft – Mix 1 tsp. Salt – Porridge consistancy – Kanji
Lentil – 1 cup Green Lentil – wash – cook in 3 – 4 cups water – till done (or pressure cook)
Saute – Heat 2 tbsp Coconut Oil Pan – 1/2 tsp. Mustard – 1/2 tsp. Cumin – 1 Chopped Onion – 1 handful curry leaves – 3 cloves Garlic – 1 1/2 tsp. Salt – till translucent – 1 tsp. Chilli Powder – Stir 1 mnt.
Payar – Mix cooked Lentil – To Saute – Bring to Boil Done
Chammanthi – 1 cup Grated Coconut – 1 Cup Chopped Raw Mango – 1” Pc Ginger -1 Schallot (or small pc onion) – Salt 1 tsp. – 1/2 tsp. Chilli Powder – 10 curry leaves – Grind Coarse paste
Serve Kanji with Payar and Chamanthi.
Note : Add more or less water,Salt and Chilli as required.
I like to eat Payar or Chamanthi with Rice or Chappati instead of Kanji.
Last week Sita Luc and Anna returned after a month long trip to India. Luc enjoyed eating this dish many times in Kerala and also talked about it many times. So I guessed if Luc with his European taste buds enjoyed this recipe so much I should share it here for all my other friends too.
Kanji Payar Chammanthi A traditional recipe from Kerala, South India
Cheesy Curried Cauliflower with Chilli Chips
Boil – 1 large Cauliflower – cut into florets – 5 mnts – Boiling water – till Soft – Drain
Flour Mix – 1 tbsp. Flour -1/2 tsp. turmeric – 1/2 tsp garlic – 1 tsp Curry Powder -1 tsp. Salt
Sauce – Heat Sauce Pan – low flame – 2 tbsp. Butter – Flour Mix – Stir well – 1 mnt – 1/2 cup water – 1 cup Milk – Bring to boil – whisking continuously till sauce thickens +/- 2 mnts.
Add – Boiling Sauce- Cawliflower Florets to Sauce – Handful Chopped Coriander – 1 tbsp. Lemon juice – Stir well
Topping – Spread 1 cup Grated Cheese – to Boiling – Cover with Lid – Turn off Stove – Rest for 5 mnts – till Cheese Melts.
Sides – Avacado – Peel – Destone – Mash – Mix – Pepper – Salt and Lemon Juice to Taste.
Serve Delicious Cheesy Curried Cauliflower with Mashed Avacado and Fries Sprinkled with Chilli and Salt
Note : Add spices, Curry Powder or Herbs of Choice. Adjust Salt to Taste.
