Air Fried Asian Chicken Wings

Air Fryer Asian Chicken Wings in a delicious homemade Asian sauce with toasted sesame seeds for More Flavour.  A Delicious recipe Via –  In Dianes Kitchen.

  1.  Over medium heat combine the soy sauce, brown sugar, garlic, ginger and onions. Bring to a boil and boil for one minute.
  2. Cook chicken wings in air fryer at 400 degrees for 25 minutes.
  3. Remove Wings from air fryer and place  in a large pan.
  4. Pour the sauce on top of the wings  Mix till well coated.
  5. Place  wings back in air fryer and cook at 400 degrees for 5 minutes.
  6. Serve Garnished with sesame seeds

INDIAN KERALA MEEN ACHAR

fish Pickle Indian Recipe

Wash – Clean – Cube – Fish  – Tuna 250 g.

Marinate – 1 tsp Pepper  – 1 tsp. Turmeric – 1 tsp Salt – 15 mnts – Deep Fry – in Oil   – in Batches – Drain

Crush – 2 inch Pch Ginger – 8 -10 cloves Garlic   – 3 Dates – 1 tsp. Salt

Saute – 1/2 Cup Hot Oil – 1/2 tsp. Mustard – 1/2 tsp – Fenugreek Seeds – Crushed items  – Handful Curry Leaves – Low Flame – 2 mnts – turn off stove.

Add – Hot Oil – 2 tbsp. Paprika  or Kashmir chilli Powder – Mix well – 2 tbsp. Apple Cider Viniger – 4 tbsp water – Bring to Boil – Add fried fish – Boil – 3 -4 mnts  – Done

Cool and Serve with Rice or Chapati.

Store in air tight Jar in the refrigerator for upto 2 weeks.

Note :  Adjust Salt and Spice to Taste.   Oven Fry Fish till dry if less oil preferred. Use fish boneless fish of choice.

Homemade Crescent Bread Rolls

Mix – 1kg  Flour – 600ml lukewarm water – 100ml oil –  50g Fresh Yeast –  1tsp salt, 1-2 tbsp.  Sugar

Knead  – Sticky Dough – Rest +/- 2 hrs – Till Doubled

Divide – Oil Worktop – Gently Roll  – 16 Triangles  – Roll to Form Cresent – Rest 15 mnts – Egg wash

Bake – Preheat 185 deg C – Bake 35-40  mints till golden.

Meat Balls in Flavourd Cabbage Sauce

Slice  – 1 Onion – Half Head of Cabbage (or 4 cups)

Meat Balls –  1/2 kg.  Ground Meat  – Salt -Pepper to taste -1 Egg –  Mix – Form Balls – Desired Size

Saute – Onions – 2 mnts –  Add Cabbage – Stir  Fry – till Soft – 2 tsp. Sweet Chilli Powder – Mix – 1 cup Tomato Puree – Salt – Bring to Boil

Cook –  Meat Ball to above – Continut to Cook  – 10-15 mnts

Garnish – Handful Frozen  or Fresh Green Peas – Boil 3 mnts.

Flavour – Handful Dill leaves – Stir in Boiling Sauce – Done

Serve with Rice or Bread.   Delicious Yummy Cabbage Meatballs.

Note :  Use Ground meat of choice.  Use Herbs of Choice. Use Spicy Chilli if preferred. If using Prepare Ground Meat  Make ball directly without Egg.

Pudina Paneer – Homemade Minty Cottage Cheese

Home made cottage Cheese Pudina Paneer Recipe

Pudina Paneer  –  Minty Cottage Cheese

Heat – 1 Ltr. Fresh Full Milk – Bring to Boil –  1/4 Cup Lemon Juice  – 1/4 cup Yogurt – turn off Stove – rest 10 mnts  – to curdle – Cheese and Whey.

Strain –  In Colander – Thin Cloth – Pour Curdled Milk – Strain –  Gather  cheesecloth gently squeeze – remove excess Whey

Set –– Tie Cheese Cloth to form tight package – Put it on a Plate – Place a cutting Board or another plate on the Package to press down –  1 Hour –  Open Package   – Slice in 1 inch cubes – Paneer Cubes ready- Refrigerate 1 Hour.

Flavour – 1 tbsp. Mint powder – 1 tbsp. Lemon Juice – 1 tsp Salt  -1/2 chopped tomato – 1/2 tsp. turmeric powder -1/2 tsp. Pepper powder – 1 tsp. garlic Paste – 1 tbsp. Oil.

Microwave – In a Bowl  – Mix Flavour  – Microwave for 2 mnts — Add  Paneer cubes to hot Flavour  – Microwave – 2-3 mnts. – Done

Serve – Garnish with Corriander leaves   as Starters

Slice  – 1 Orange – 1 Tomato – 1 small Mozzarella cheese  – 1 slice Lemon

Marinate – 1 Sliced Onion – 1 tbsp. lemon juice – Pinch of Salt

Chop – Peel – Destone – Chop  – Avocado in Pcs

Garnish –  Handful Blueberry and Parsley

Serve – Arrange  Chopped Fruits and Vegetables on plate  – Garnish with Blue berry and Parsley – Sprinkle Pepper and Salt to taste.

Peal – Chop  – 4 large Avocados – 1 Mango + 1 Mango

Blend – Chopped  Avocados – 1 chopped Mango – Juice of 6-8 Lemon – Stevia  to Taste. – Avocado Mango Mousse

Serve – Spread Avocado Mango Mousse  in a Dish – Top with Chopped Mango

Garnish –  With Cacao Nibs.

Tomato Chutney Topped Boiled Eggs

Boiled Eggs tomato Chutney Gojju Chapati

Boil – Boil – Peel – 6 Eggs –  Cut in two.

Chop – 3 Big Onions   Handful Curry Leaves –  Garlic  4-5 cloves.

Spice – 1 tsp. Chilli Powder –  1 tsp. Corriender Powder – 1 tsp. Turmeric Powder

Saute  – Heat Oil -1 tsp. mustard seeds –  Add Chopped items – 1-2 tsp. Salt  – Saute –  1-2 mnts.

Fry –  Add Spice Mix to Saute  -Stir  well  – 6-8  Medium Size Tomatoes Chopped – 5-6 mnts –  Medium Flame – till tomatao melts in Gravy

Topping – Top With Boiled Eggs

Serve with Chapati or Naan or Rice.  Delicious Tomato Gojju Ready.     

Note : Use herb of Choice.  Adjust Salt and Spice to Taste. 

When we were living in Mathikere Bangalore, most evenings Anto and me,   ended up at Latha and Ramesh’s Place.   

Such beautiful memories of Indian Summer evenings. Me and Latha chatting inside the house, Shruthi was so samll then, a little princess dancing around.    Anto and Ramesh  as usual outside discussing various plans and Projects and ideas.

Ramesh would come in suddenly and say – ” Lathama can you quickly make some Chappatis and Tomato Gojju with Eggs” 

Both Latha and Ramesh never allowed us to leave before sharing dinner with them.  Siddhu, this was before you were born  and Karthik,  you were then part of Princess Shruti’s dreams yet to come true.

Thank you Ramesh and Latha for welcoming us everytime we visit  India and the gifts and the parties you have organised with all our friends group.

Latha we make  Tomato Gojju atleast once  a week.    It is the most loved dish in our house.  We eat it with Breakfast Lunch and Dinner!!

Yummy Yogurt Ice Cream

Yogurt ice cream

Chop – 250 g  Fruit

Freeze – Spread fruits on Tray – Freeze – +/-2 hrs.

Blend – 250 g Thick – Creamy Full Fat Yougurt – Frozen Fruit – Pinch Vanilla Essence – 1 tbsp. Honey -Creamy Texture

Freeze – Airtight Container  – +/- 2 hours

Serve  –  Spoon Ice Cream in cups – Serve topped with chocolate or Berries. Or Just Eat Plain.

Todays Icecream is made with BlueBerries.

Delicious Cooling Healthy Icecream Ready !!  mmm……. Love it!!   Enjoy.

Note :  Use Fruit of Choice.  Add extra Honey to taste.  Or Add sugar if you prefer.
