Kadai Paneer Recipe

 

Marinate –  300 g Paneer Cubes – 1/2 Cup Yogurt – 1tsp. Salt – 1 tsp. Garam Masala – 1tsp. Ginger Paste – 1tsp. Red Chilli powder  –  20 mnts

Spices –  Dry Roast –  1 tsp. each  Coriander Seeds  – Cumin Seeds –  Fennel Seeds –  Pepper – Low flame till Aroma – turn off  Flame – Mix  2 tsp. Dry Methi Leaves 

Puree – 2 Ripe tomatoes  – Mix  2 tbsp Cream

Saute  – 1 tbsp. Butter –  1 Onion – 1 Green Bell Pepper  – Add Spices  – Add Puree – bring to Boil – Add Marinated Paneer – cook 2- 3 mnts.

Serve  – With Chapati or Naan or Paratha.

Note : Adjust Salt and Spices to taste.

Kadai (Wok) Paneer – Paneer (Indian cottage cheese) and Capsicum  cooked in a spicy masala. Recipe for Delicious and  flavourful Paneer made by cooking Paneer and Bell peppers with fresh ground spices.

Pomegranate Lentil Sprouts Salad

Pomegranate Lentil Sprout Salad

Soak – 1/2 cup Green Beans in Water – 24 hrs – Drain – cover –  warm place  –  2-3 days –   Check  and wash beans every day.  Until Sprouted.

Deseed  – 1  Pomegranate – Chop 1 tomato –  1 Lemon Juice – – Add to above – Salt to Taste – Toss

Garnish –   Chopped Green chillies – Fresh Coriander

Drizzle –  Pop Tsp Mustard  in hot Oil – Add to Salad

Recipe for Spicy Beans Sprout Salad with fresh pomegranate garnished with Chopped Green chillies and Fresh Coriander.

Blend until Smooth – Dates – Dried Apricots – Pecan Nuts – Shredded Coconut – Cacao Powder – Juice and Zest  Orange  – Coconut Oil – Cinnamon – Hemp Seeds

Roll into balls.

Roll balls in the extra shredded coconut.

Parippu Thalichathu – Dal Fry Recipe

Parippu Thalichathu - Dal Fry Recipe

Cook – 1 Cup Toor Dal -Wash –  +/- 6  Cups Water  -Bring to the boil – Skim off any scum that rises to the surface.

Add – 2 Slit Green Chilli – 1 Chopped Onion chunks – Cook till just done

Saute – 1 tbsp.  Coconut Oil – 1 Chopped Onion pcs. – handful Curry leaves – 1 tsp. Salt –  till translucent – 1 tsp. Crushed Chilli Powder. – Stir +/- 1 mnt – low flame

Mix – Saute to Cooked Dal – Add water if needed –  Bring to Boil – Turn off Stove – Done

Serve with Rice or Naan.

Note :  Add more or less water as required.  Adjust Salt and Spice to taste.  Soak Dal for couple of hours to reduce cooking time.

This recipe brings back memories of my Dad who loved Dal and  cooked  various versions of Dal most evenings.   Appachan I have decided to make Dal most evening too.

Easy Mushroom Stroganoff

Recipe for Mushroom Stroganoff

 

Chop – 1 Big Onion – 2 Cloves Garlic – 500  gm  Mushrooms   – 2 Bell Peppers

Saute – Heat 1 tbsp. Olive Oil – Onions – Garlic – 1 -2 mnt. – 1 tsp. Salt  – Mushroom — Bell Pepper – 6-7 mnts till tender

Add – 1tsp. Sweet Chilli Powder – Stir well – 1 tbsp Tomato Puree. – 2 tbsp Water   – 1 cup Cream – Stir well – Bring to Boil –  Twist Lemon  – Black Pepper – Done.

Garnish – Crispy Fried Bacon and a Sprinkle of Herbs

Serve with Rice or Spaghetti.

Note :  Adjust Salt Pepper to Taste.   Use herbs of Choice.

Recipe for Mushroom Stroganoff   Garnished with Crispy Bacon and Parsley. Creamy  Delicious and Easy to Make.

Warm Apple Cider Donuts

Mix –  1/4 cup apple cider -2 tbsp butter – 1 cup sugar – 1 egg – 2 cups AP flour- 1 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp cinnamon  – 1/4 cup milk – 1/2 tsp lemon juice

Roll  – 1/2″ thick –  refrigerate for 15-20 mnts. – Punch out donuts 2-3 inches wide.

Deep Fry – Hot Oil 60-90 seconds  each side – Sprinkle cinnamon sugar while still warm.

Pineapple Chicken — Finger licking Flavours

Marinate –  1 Kg Chicken – Juice 1 lemon – Salt  – Pepper – 2 tbsp Oil  – 1 hour – Grill till done.

Saute  – 1 Onion – 1 tsp. each Minced Garlic and Ginger – 2 Bell Pepper – 3/4 cup chopped Pineapplle – in Oil

Sauce-  Blend 1/4 cup Pineapple – 1/4 cup Orange juice  – 1 tsp. each Salt – Sugar and Chilli flakes – 1 tbsp. Corn Starch  add to Saute. Simmer 3-4 mnts.

Serve – Grilled Chicken with Sauce – Garnished with Coriander leaves.

Chocolate Mug Cake

 

Dry – 3 Tbsp cocoa powder – 1 Tbsp coconut Powder – 1 Tbsp tapioca flour – 1 Tbsp sweetener – 1/2 tsp baking powder – pinch of salt

Wet – 1 large egg – 3 Tbsp water

Mix – Wet and Dry in a small microwaveable Bowl

Microwave  – +/- 2 Mnts –  Cool – Top with Fruits – Serve.
