Pineapple Chicken — Finger licking Flavours

Marinate –  1 Kg Chicken – Juice 1 lemon – Salt  – Pepper – 2 tbsp Oil  – 1 hour – Grill till done.

Saute  – 1 Onion – 1 tsp. each Minced Garlic and Ginger – 2 Bell Pepper – 3/4 cup chopped Pineapplle – in Oil

Sauce-  Blend 1/4 cup Pineapple – 1/4 cup Orange juice  – 1 tsp. each Salt – Sugar and Chilli flakes – 1 tbsp. Corn Starch  add to Saute. Simmer 3-4 mnts.

Serve – Grilled Chicken with Sauce – Garnished with Coriander leaves.

  1. Bell peppers I once had in salad bar in Stockholm little tint peppers that exploded with flavour and heat. I took seeds to grow them but not one developed. Sad as I can make this ,meal good with bell pepper powder from Poland but the real deal no one has here not surprising as still getting into things are Latvians after being ruled behind Churchills named Iron Curtain. if little bell pepper seeds can be bought in your shops can you send me a packet Ill gladly pay the price and postage.

    1. A few year ago I grew tiny Scotch bonnet from seeds collected from an overripe storebought tiny african pepper. I dried the seeds then sprouted it in kitchen towel , planted in pots indoors. transferred to the garden in Summer. Had many plants and many fruits. Bought a few plants indoors for the winter. Spicy and flavourful and beautiful. replanted in garden next year. I should do it again. Probably you can find it in African or Asian stores too. good luck.
