Keema Mutter – Ground Meat and Peas Curry

Keema Matar Recipe

Crush – 1 Medium Onion – 2 inch Ginger pc.  – 6-7 Cloves Garlic –  Handful Curry Leaves

Spice – 1 tsp. Garam Masala – 1/2  tsp. Pepper – 1 tbsp. Coriander –  1 /2 tsp. Cumin -1/2 tsp. Turmeric – 1/2 tsp Chilli – 1 tsp. Salt – Spice Mix Powder

Chop –  3 tomatoes  – 1 Carrot  – Small Pcs.

Saute  – Pan – 2 tbsp. Oil -Heat –  Crushed items  – Stir fry 1 mnt – Add Spice Powder – Saute 1/2 mnt. – Add Chopped  – Fry 1 to 2 mnts.

Cook – Add 1/2 kg Ground Meat – Stir Fry 2 mnts – 1/2 cup Water – Bring to Boil – cover and cook – 10- 12 mnts  – Add  Peas – cook  +/- 5 mnts till Done

Garnish – Chopped Coriander Leaves or Parsley.

Serve  – Delicious Keema Curry with Rice or Naan and Raitha

Note :  Use Beef or Any Ground meat of choice.  Use Sweet Chilli Powder instead of Spicy and adjust Salt to taste.

Dhaba Dal - Green Lentil Curry Recipe

Soak – Cook  – Green gram 1 cup –  5 cups water – soaked over night – cook till soft

Chop –  2 Medium Onions – 5 Garlic cloves  – 1 inch pc Ginger – Few Curry leaves  – 2 tomatoes

Spices – 1 tsp. chilli Powder 1/4 tsp. Turmeric powder – 1/4 tsp. Cumin Powder 1/2 tsp. Coriander Powder -1/2 tsp. Garam Masala – 1 tsp.  – 1 tsp. Salt – –  pinch Asafoetida powder

Heat – Pan – 2 tbsp. Ghee – Onion Ginger Garlic – till golden – Add spices – Stir +/- 1 mnt – Tomatoes  -2 mnts
Combine – Add cooked lentil to above –  More water if required – Bring to Boil

Garnish – Coriander leaves –  Twist of Lemon

Serve Delicious Dhaba Dal Hot with Rice or  Naan.

Note – Use Lentil of Choice – Adjust Salt and spices to Taste

Spices: –1 TspChilli powder – 1 Tbsp. – Coriander powder – 2 Tsp-Turmeric powder – 1  Tsp- Pepper powder – 1 Tsp- Garam masala – 1 Tsp- Fennel powder

Chop –  3 Onions – 3 Green chilly – 3  Tomato

Saute – Heat 2 tbsp. coconut oil in a pan  – Add handful  curry leaves, -1 tbsp. ginger garlic paste – Add Onion – Green Chilli –   +/- 1 Tsp. Salt to taste –  Fry till translucent – Add Spices – Stir – 1 mnt – Chopped Tomato – Stir 1 mnt.

Cook  –  Add 1 kg. Pork – Bite size pcs.  to above –  Stir fry  2-3 mnts –  Add 1/2 cup water –  cook on low Flame or Pressure cook till done

Garnish  – 1 cup Sliced Coconut – Bring to Boil.  Cook to reduce sauce to desired consistancy.

Serve Delicious Curry  with Rice or Chapati

Note – Use Beef instead of Pork.   Adjust Spices and Salt to Taste.   Use Apple cider Vinegar instead of Tomato.

Chicken Tikka Masala

 

Marinate –  2 tbsp. Yogurt – 1 tsp. Salt – 1 tsp. Garam Masala  – 1 kg Boneless Chicken – Bite Size Pcs – 30 mnts. (or overnight in Fridge)

Chop –  4 medium Onions – Small pcs.   Grate –  6 cloves Garlic – 2 Inch Pc. Ginger –  2 Bell Pepper bite size pcs

Spices –  1 tsp. Chilli Powder – 1 tsp. Cumin Powder – 1 tsp. Coriander Powder – 1 tsp. Turmeric Powder – 1 tsp. Salt  – 1 tbsp.  Dry Kasuri Methi leaves

Heat –  Pan – 2 tbsp. Butter (ghee) – Saute Onion -Ginger -Garlic – Low Flame till brown – Bell Pepper saute  -1-2 mnts – Add Spices  –  Stir – 30 Secs.  – 1 Cup tomato Puree – Bring to Boil.

Cook –  Add Chicken to above – Bring to Boil – Lid on – Cook on low flame +/- 25 mints.  till done

Garnish  – 1 tbsp. Full Cream  – 1 tbsp. Crushed Cashew Nuts and a twist of Lemon Juice

Serve Delicious Chicken Tikka Masala with Rice or Naan.

Note –  Grill Marinated Chicken and add to sauce if preferred.   Or Cook Chicken in Oven with  Sauce.   Adjust salt and spices to taste.

Seaweed Soup with Mussels

Seaweed Mussels Soup

Soak  – 2 Dried Kombu Seaweed – 15 mnts – Chop bitesize pcs.

Boil – 6 cups Water –  Seaweed –  1 cup Frozen Mussel Meat – 2 tsp Fish Sauce – 1 tbsp. Sesame Oil – 1 tsp. Chilli Powder – Boil – 3-4 mnts 

Cook – Add 100 g Noodle to above – Boil 2 mnts

Garnish  – Add – Chopped Green Onions to above – Done

Enjoy Delicious Soup for a quick Lunch.

Note – Use herbs instead of Onions.   Use Seaweed of Choice.

Chemmeen Vada – Prawns Patties

Prawns Chemeen Vada Recipe

Salad cucumber

 

Peel –  2 cups Raw Prawns – cut small pcs.

Skin –  4 Shallots – 1/2 inch pc Ginger – 4 Cloves Garlic

Spices –  1/2 tsp. Each – Chilli – Pepper – Turmeric Powder – Salt to taste- Handful Curry Leaves

Grate – 1 Cup Grated Coconut  ( Fresh or Dry)

Blend – Above items  – Rough Paste.  –  Make small Patties.

Fry – Heat Pan – 2 tbsp. Coconut Oil –  Shallow Fry Prawn Patties – Low Flame – +/-2 mnts each side.

Delicious Chemmeen Vada ready to be Served as a Starter or Side dish.

Note – Adjust salt and spices to taste.   Make a small doughnut hole in the middle of Patty for even cooking.

Recipe for Quick and Easy Kerala Style  Beef with Potato Curry - Beef Urulakizhangu Curry

 

Cut – 750 g  Beef  –  small pieces    Chop –  1 Onions – 1 inch  pc. Ginger – 4 Cloves Garlic – 2 Green Chillies

Cube  – 4-5  Potatoes   Slice – 1 Onion  – 1 Tomato

Spices – 1/2 Tbsp. Red Chilli powder – 1 tbsp. Coriander powder – 1 Tsp. Pepper Powder – 1/2 Tsp.  Garam masala

Cook –   Mix Beef with Chopped items – +/- 1 cup water – 1 tsp  Turmeric Powder –  Salt to Taste –  Pressure cook till soft.

Saute – Heat – 2 tbsp Oil – Sliced Onion –  Handful Curry Leaves – 1-2 mnts – Add Spices –  Stir Fry -Low Flame – 1 mnt –  Add Tomatoes –  1 mnt.

Add –  Saute to Cooked Beef –  Bring to Boil – Add Potatoes  – Add water as needed –  Cook till potatoes are soft.

Delicious Curry ready to be served with Rice or Chapati.

Note – Adjust Salt and Spices to Taste .   Use Coconut Milk instead of additional water for milder taste.

Easy Recipe Tomato Hummus Chutney

Boil – Wash Soak Cook Chickpeas – Till Soft – 1  Cup

Toast –  1 tbsp. Sesame Seeds – Pan – Low Flame – 1 -2 mnts. – cool  – Grind – to smooth paste.

Chop – 1 Cup Soft Sun Dried Tomatoes – Small Pcs.

Spice – 1 tsp. Chilli Powder – 1/2 tsp Garlic powder – Salt to Taste

Blend  – Chickpeas – Sesame Powder – Chopped Tomatoes – Spices – 1 tbsp. Oil –  +/- 2 tbsp. Water – Juice of 1 small Lemon – Smooth Paste  – Ready

Enjoy Spicy Tangy Tomato Hummus Chutney as a Spread or Dip or a Side Dish.

Note :  Use Tinned Chickpeas if available.  Adjust Spice to taste.   Soak Sun dried tomatoes to make soft.

Homemade Aromatic Garam Masala

Recipe Easy Homemade Garam Masala

Spices – 2 Bay leaves – 3 -4 Cinnamon Sticks – 1 tbsp. Each – Coriander seeds – Cumin seeds – Cardamom seeds – Cloves – Fennel Seeds

Optional Spices – Pepper – Dry Red Chilli – Turmeric – Nutmeg – As per taste

Dry Roast – Spices – Low Flame – 2 -3 mnts.

Grind – Roasted spices – Coarse Powder

Store – Cool – Store in Airtight Container – Use 1 to 2 tsp.  to Flavour dishes.

Steam –  300 g Fish – Debone – Shred.

Chop – 1 cup Spring Onions  – 1 inch pc Ginger – 4-5 Green Chillies – Handful Curry Leaves

Grate – Coconut  – 1 Cup

Spices – 1/2 tsp. Turmeric + 1/2 tsp. Pepper Powder – 1/2 tsp. Amchur Powder – 1 tsp. Salt

Saute –  Heat Pan – 2 tbsp. Coconut Oil –  Fry Chopped items- 2 – mnts -Add Spices –  mix-  Add Fish –  Stir Fry  – 2-3 mnts  – Mix Grated coconut – Stir fry 1  mnt.   – Turn off stove.  Done
