Joy’s Pineapple Kugel for Passover

Mix – 4 eggs – ½ cup oil  – ½ cup sugar – 4 Tbs. potato starch – 1 Tbs. vanilla sugar – 1 tsp. baking powder  – Stir Well

Add – 1  – 20 oz. can crushed drained pineapple to  above  – Mix

Bake – Preheat  oven 350 F – Bake for +/- 40 mnts – until firm and lightly browned.

Chocolate Mug Cake

 

Dry – 3 Tbsp cocoa powder – 1 Tbsp coconut Powder – 1 Tbsp tapioca flour – 1 Tbsp sweetener – 1/2 tsp baking powder – pinch of salt

Wet – 1 large egg – 3 Tbsp water

Mix – Wet and Dry in a small microwaveable Bowl

Microwave  – +/- 2 Mnts –  Cool – Top with Fruits – Serve.

Mani Puttu Rice Dumpling in Coconut Sauce

 

Rice dumplings Maniputtu Coconut Milk sauce Dry Fruits Berberry
Mani Puttu Dry Fruit Garnish

Dough – 2 cups water – 1 tsp ghee – Pinch Salt – Boil – Stir – +/- 2 cups rice powder –  turn off  stove

Dumpling – Roll to form cherry sized ball

Cook – 2 -3 cups  Water –  pinch – cardamon powder/ Salt -Sugar to taste – Boil – add Dumplings – 5 mnts

Finish – Add 1 cup thick coconut milk – Boil 2 mnts – Dried Berberry to Garnish – cool 2 mnts. – Done 

Enjoy Delicious – Gooey – Coconutty – Traditional comfort food.

Note : Steam  balls if preferred. Use regular Milk instead of coconut milk. Add more Milk if preferred. Use Raisons instead of Berries.  Enjoy without Garnish too.

Shepherd’s Pie  Casserole

Easy Shepherd’s Pie Recipe Microwave

Chop – 1  medium Onion –  1-2  cups Mixed Veg  Carrot – Tomato – Peas

Mash – 3 large Potatoes – 7-8 mnts – Microwave (or Boil till Soft) – Peel and Mash

Spices  – Pepper – Salt – Garlic Powder – 1 tsp each

Saute – 1 tbsp. Oil –  Onions – till Translucent –  600 gm  Ground Meat -3-4 mnts – mixed Vegetables – Add  Spices – 5 -6 mnts – till done

Arrange –  Most of  Saute  – Ovenproof  Dish , Top with Mash and Ruffle with a fork.

Garnish –  Decorate with left over Saute – Sprinkle Grated Cheese – Parsley

Microwave – 3-4 mnts till Cheese melts.

Delicious Easy Quick Shepherd’s Pie ready to enjoy.

Note – Use Spices Herbs and vegetables of Choice.   Adjust quantities to taste.

Mattanga Parippu – Pumkin Dal Curry

Recipe for Easy Simple Delicious Indian Vegetarian Lentils.  Savory Indian-spiced red lentils simmered with chunks of pumpkin .

Chop – Wash – Peel  – Cut in Chunks – 3 cups Pumkin  –  Slice – 3 fresh Red Chilli (mild long)

Spices – 1 tsp. Chilli Powder – 1/2 tsp Turmeric powder – 1 tsp. Salt

Cook– 1 cup Red Lentils – 4 cups water – Boil – Skim off and discard  foam –  low flame – 12- 15  mnts – Add Spices  – Pumpkin – cook 6-8 mnts – till Pumpkin is Soft.

Garnish – Heat Pan –  1tbsp. Coconut Oil –  1/2 tsp Mustard Seeds – 1 tsp.Cumin Seeds -1 tsp.  Crushed Garlic – Handful Curry  Leaves – 1 mnt –  Add to cooked Above. – Done

Enjoy Delicious Mattanga Parippu Curry with Rice or Chapati

Notes : Adjust salt and Spices to taste.  Add more water if required for cooking lentils. Add tsp. of white lentil to Garnish for thicker consistance.
