Boil – 1/2 Cup Yellow Lentils (toor Dal) – 1 tsp. Turmeric Powder – Until – cooked
Saute – 1 tsp. Oil – 1 knob butter – 1 tsp. each Mustard seeds – cumin – 1 chopped Onion -2 cloves Garlic – 2 green chillies till translucent. Add 1 tomato and cook 3- 4 minutes.
Add – to above – Chopped Young Pumpkin leaves and flowers (4 -5 cups) – salt to taste – bring to boil – Add Cooked lentils – boil for 2 mins – Done.
Enjoy with Rice or Naan
Note : Adjust Salt and Spice to taste. Use Spinach instead of Pumpkin / Squash Leaves.

Thank you for the recipe. I also like Red Dhal or Parippu as we Sri Lankans refer for Red Dhal. Yes you can use Dhal for many dishes, even when we make soup we put in some to make it thick. In my case I like plain white curry, meaning just Yellow curry, or with spinach. Not with too many other things and not with too much of spices. Hope you are well too. I love Sri Lankan Curries too. So similar to South Indian Cusine with Coconut and Spices. Hopefully I can visit Sri Lanka One day after the Crisis. Always wanted to visit. Enjoy your weekend.

Sounds delicious. I have always heard that pumpkin leaves are edible. Would you do a recipe on how to cook it. I love pumpkin but never ate the leaves.
