Palappam Or Appam / Coconut Rice Pancake
Blend – 2 cups Rice Powder – 1/2 cup Cooked Rice – 2 tbsp. Grated Coconut – 1 cup Coconut Milk – 1 tsp. Salt – Smooth Consistancy – Batter
Mix – 1 tsp. Yeast – 1/4 Cup Water -1 tsp. Sugar – 15 mnts – till Frothing – Mix to above
Ferment – Batter mixed with Yeast – Overnight.
Garnish – Chop – Bell Peppers – Mixed Colors – Small Pcs – Wash and Drain – 1 Cup (Optional Step).
Heat – Grease Pan – Pour Ladelful Batter – Spread – thick middle – Thin Sides – Sprinkle Garnish.
Cook – Close it with a lid and cook on low heat +/- 1 mnt – Done. Continue – with rest of Batter.
Serve – Appam with Spicy Vindaloo Or Chicken Korma or Stew or Egg Curry. For sweeter version serve with Coconut milk and Sugar.
Note : Adjust consistancy of Batter with more water or Rice powder as necessary.

Vishu Katta – Coconut Rice Cake
Happy Vishu Feast !! Stay Home. Stay Safe.
Soak – 1 cup white Rice 1/2 Hour
Boil – Soaked rice – 2 cups Water – 2 cups Coconut Milk – Vanilla powder – Pinch salt Simmer till all liquid is absorbed – Creamy texture
Mix – 1/2 Cup Grated Coconut – Mix – turn off stove – tight lid – 5 mnts.
Spread – Flat Plate – cool – Slice – Garnish with nuts.
Syrup – 1/2 cup Jaggery – 1 cup Water – Boil – simmer – till melted – pinch of Cinnamon – done – 5 mnts.
Serve – Rice Cakes with Syrup.
Note : Flavour with Cumin instead of Vanilla or Serve with Maple Syrup.

Keema Mutter – Ground Meat and Peas Curry
Keema Mutter – A delicious curry blend of minced meat and peas sauteed in a thick mixture of stimulating flavors with Indian Spices
Crush – 1 Medium Onion – 2 inch Ginger pc. – 6-7 Cloves Garlic – Handful Curry Leaves
Spice – 1 tsp. Garam Masala – 1/2 tsp. Pepper – 1 tbsp. Coriander – 1 /2 tsp. Cumin -1/2 tsp. Turmeric – 1/2 tsp Chilli – 1 tsp. Salt – Spice Mix Powder
Chop – 3 tomatoes – 1 Carrot – Small Pcs.
Saute – Pan – 2 tbsp. Oil -Heat – Crushed items – Stir fry 1 mnt – Add Spice Powder – Saute 1/2 mnt. – Add Chopped – Fry 1 to 2 mnts.
Cook – Add 1/2 kg Ground Meat – Stir Fry 2 mnts – 1/2 cup Water – Bring to Boil – cover and cook – 10- 12 mnts – Add Peas – cook +/- 5 mnts till Done
Garnish – Chopped Coriander Leaves or Parsley.
Serve – Delicious Keema Curry with Rice or Naan and Raitha
