Grilled Caramelized Pineapple

Peel the pineapple and slice it in 8 slices (remove the middle part). If wooden grill sticks are being used, place them into cold water before sticking them into each pineapple slice.

Pour the honey and juice from a half lime onto a flat plate. Add the ground cinnamon and mix it all together. Place the pineapple slices onto the plate and make sure the honey mixture gets around all pineapple slices.

Grill the pineapple slices on the grill and turn around as soon as the sides starts to get grill marks. Let the pineapple cool down a bit.

Preheat – Oven to 325 F.

Microwave  – 3/4 c.+ 2 tbsp. peanut butter – 15-20 seconds

Blend  -3/4 c. sweet potato puree – Peanut butter  – 1/3 c. oat flour – 1/2 c. brown sugar – 1/4 c. cocoa powder – 1 tsp. vanilla extract – 1 tsp. baking soda – pinch of salt

Bake – 20 Mnts – Cool 10 Min. – Done

Coconut Rice Dumplings – Pidi Kozhukattai

Recipe from Kerala India - Coconut Dumplings or Pidi Kozhukattai with Coconut and Brown Sugar or Jaggery, Simple and Easy Gluten free Recipe for tea time.

Dough  –  Mix – 2 Cups Boiling water – 1 pinch Salt – – 1 Cup Rice Poweder  – 1 tsp. Ghee

Flavour –  Mix – 1 tsp. 1  Cardomon Powder   –  1 Cup grated Coconut –  3/4 Cup Brown Sugar.

Combine – Flavour to Dough and Mix Well.

Form – Fist Shaped Dumplings

Steam – Grease Steamer –  Steam 15-20 mnts till done.   Cool slightly and Serve.

Joy’s Pineapple Kugel for Passover

Mix – 4 eggs – ½ cup oil  – ½ cup sugar – 4 Tbs. potato starch – 1 Tbs. vanilla sugar – 1 tsp. baking powder  – Stir Well

Add – 1  – 20 oz. can crushed drained pineapple to  above  – Mix

Bake – Preheat  oven 350 F – Bake for +/- 40 mnts – until firm and lightly browned.

Semolina Carrot Cake

Mix –  1/4 cup Yogurt – 1/2 tsp Baking soda –  5 mnts. –  1/2 cup sugar  – 1/2 cup Oil –   Whisk  well

Add – 3/4 cup  grated Carrot  – 1 tsp Vanilla extract  – Mix  – Add  1 cup Semolina- Pinch of salt – Mix well – Stir in 1/2 cup Milk-  1 tsp Vanilla extract   – Rest 15 mnts  – 1 tsp Baking powder

Bake – Preheated Oven 180° C  for +/- 35 mins

Pistachio Panna Cotta

Boil – 1 cup heavy cream – 1/4 cup  basil, chopped – 1/4 cup  pureed pistachios –
1/2 cup sugar  – simmer 5 mins –  cool  – Strain.

Heat  – 1/2 cup milk –  3 tsp. powdered gelatin –  2 min – Back on heat  -Simmer 2 mins.

Set – Pour in Mould – Refrigrate 3-4 hrs.

Recipe for Italian Panna Cotta with of a handful of ingredients that transcribe into a beautiful and silky dessert that’s hard to resist.

Papanasi – Romanian Cheese Doughnut

 

Papanasi Doughnut

 

Dough – Mix 300g self raising flour – 450g Crumbly Cottage Cheese – 2 eggs – Drop Vanilla –  Lemon Zest – rest 30 Mnts in Fridge.

Roll and Cut – Roll thick 2-3 cms – Cut  to make circles and rounds

Deep Fry –  Hot Oil – Medium flame  – Till Done – Drain on Paper Towel

Serve Hot  Papanasi topped with  Sour Cream and Jam.

Recipe for Traditional Romanian Fried Doughnuts Papanasi made with Cottage Cheese and Topped with Sour Cream and Jam.

Christmas Fruit Cake

boiled Christmas Cake recipe

Preheat – Oven 165 Degree C

Boil – 2 cups Pineapple Juice – 2 Cups Sugar – 2 Cup raisins – 1tsp Salt- 1 tsp. Cinnamon – 1 tsp. Vanilla Flavoring – 2-3 mins  – turn Off Stove

Mix –  4 tsp. Cocoa Powder  – 4 Cups Flour – 150g Butter –  2 tsp. Baking Soda –  1 Cup Chopped mixed nuts  – Stir in Boiled Mixture  – Combine well.

Bake – Pour in well lined baking Pan – +/- 50 mins – Till done.

Cool before cutting.

Delicious and Quick Boiled Christmas Fruit Cake ready to be Served

Note –  Use Mango Juice instead of Pineapple.   Use mixed Candied fruits  instead of raisins .   Use Brown sugar instead of white.
