Step 1
To make masala, heat oil in a pan.. Add onions and 10-12 curry leaves and saute for a minute. Add 1 tsp. ginger garlic paste and saute for a ½ minute
Step 2
Add 2 green chilies,and saute. Add 2 tsp. Chilli – Pinch Turmeric , 2 chopped tomatoes and salt, mix and cook , add 200 g Squids rings
Step 3
Sprinkle little water, mix, cover and cook till fully done.
Step 4
Switch off heat, add pepper powder and garam masala.
Step 5
Garnish with coriander leaves and serve hot with a lemon wedge.

Parippu Thalichathu – Dal Fry Recipe
Cook – 1 Cup Toor Dal -Wash – +/- 6 Cups Water -Bring to the boil – Skim off any scum that rises to the surface.
Add – 2 Slit Green Chilli – 1 Chopped Onion chunks – Cook till just done
Saute – 1 tbsp. Coconut Oil – 1 Chopped Onion pcs. – handful Curry leaves – 1 tsp. Salt – till translucent – 1 tsp. Crushed Chilli Powder. – Stir +/- 1 mnt – low flame
Mix – Saute to Cooked Dal – Add water if needed – Bring to Boil – Turn off Stove – Done
Serve with Rice or Naan.
Note : Add more or less water as required. Adjust Salt and Spice to taste. Soak Dal for couple of hours to reduce cooking time.
This recipe brings back memories of my Dad who loved Dal and cooked various versions of Dal most evenings. Appachan I have decided to make Dal most evening too.

Minty Meatballs
Mix – 1/2 Kg ground meat – Shape to form Meat Balls.
Chop – 1 big Onion – 2 cloves Garlic – Handfull Mint Leaves -3 -4 Potatoes cubed
Saute – 1 tsp Oil – Fry Onion – garlic – Mint -1 mnt – 1 tsp Sweet Chilli (Paprika) Stir well – 1 tbsp. Tomato Paste – 2 cups water – Bring to Boil – Salt to taste
Cook – Add meatballs to above – Boil – Add Potatoes – Low Flame – cook till done +/- 20 mnts – Turn off stove – Drizzle of Lemon Juice
Serve with Rice or Bread

Easy Mushroom Stroganoff
Chop – 1 Big Onion – 2 Cloves Garlic – 500 gm Mushrooms – 2 Bell Peppers
Saute – Heat 1 tbsp. Olive Oil – Onions – Garlic – 1 -2 mnt. – 1 tsp. Salt – Mushroom — Bell Pepper – 6-7 mnts till tender
Add – 1tsp. Sweet Chilli Powder – Stir well – 1 tbsp Tomato Puree. – 2 tbsp Water – 1 cup Cream – Stir well – Bring to Boil – Twist Lemon – Black Pepper – Done.
Garnish – Crispy Fried Bacon and a Sprinkle of Herbs
Serve with Rice or Spaghetti.
Note : Adjust Salt Pepper to Taste. Use herbs of Choice.

Sriracha Chicken Wings – Dijonnaise Dip
Toss – 4 pounds chicken wings, split at the joints – 2 tsp. salt – few grinds black pepper
Preheat Oven – 200 Deg C – Spread wings – Bake – +/- 1 hour – Till Done
Melt – 2 Stick of butter – Mix – 3/4 Sriracha(chilli Sauce). Toss the Baked Wings.
Mix – ½ cup mayonnaise – 3 Tbsp. Dijon mustard – Zest and juice of one large lemon – ½ grated garlic clove – ½ tsp. kosher salt – Lemon Dijonnaise Dip

Warm Apple Cider Donuts
Mix – 1/4 cup apple cider -2 tbsp butter – 1 cup sugar – 1 egg – 2 cups AP flour- 1 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp cinnamon – 1/4 cup milk – 1/2 tsp lemon juice
Roll – 1/2″ thick – refrigerate for 15-20 mnts. – Punch out donuts 2-3 inches wide.
Deep Fry – Hot Oil 60-90 seconds each side – Sprinkle cinnamon sugar while still warm.

5 Minute Coconut Almond Fudge
Microwave – Sweetened condensed milk – Chocolate – +/- 1 Mnt. – till melted
Stir – Vanilla Extract – Toasted Coconut and Sliced Almonds.
Slice – Pour fudge into pan and smooth. Sprinkle Sea salt (optional). cut in squares

Khajoor ki Chutney – Dates Chutney
Chop – De-seed and Chop 250g Soft Dates – Small pcs.
Soak – Tamrind (Tennis ball Size) in 1 cup Hot Water – Extract juice
Heat – Pan – 2 tsp. Oil – Low Flame – 1/2 tsp Cumin Seeds – 1/2 Fennel Seeds – 1/2 tsp. Ginger Powder – 1tsp. Chilli Powder – Quick Stir
Saute – Dates – in above – 3-4 mnts – 1 tsp. Salt – Low Flame
Cook – Pour Tamrind Juice to Saute – Pinch of Sugar Bring to Boil – Till Dry and Oil has started to realease – Turn off Stove – Done
Delicious Chutney to Enjoy with Pilaf or as Dip or Sauce for Snacks. Yummy!!
