Dough – Mix 300g self raising flour – 450g Crumbly Cottage Cheese – 2 eggs – Drop Vanilla – Lemon Zest – rest 30 Mnts in Fridge.
Roll and Cut – Roll thick 2-3 cms – Cut to make circles and rounds
Deep Fry – Hot Oil – Medium flame – Till Done – Drain on Paper Towel
Serve Hot Papanasi topped with Sour Cream and Jam.

Sriracha Chicken Wings – Dijonnaise Dip
Toss – 4 pounds chicken wings, split at the joints – 2 tsp. salt – few grinds black pepper
Preheat Oven – 200 Deg C – Spread wings – Bake – +/- 1 hour – Till Done
Melt – 2 Stick of butter – Mix – 3/4 Sriracha(chilli Sauce). Toss the Baked Wings.
Mix – ½ cup mayonnaise – 3 Tbsp. Dijon mustard – Zest and juice of one large lemon – ½ grated garlic clove – ½ tsp. kosher salt – Lemon Dijonnaise Dip

Warm Apple Cider Donuts
Mix – 1/4 cup apple cider -2 tbsp butter – 1 cup sugar – 1 egg – 2 cups AP flour- 1 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp cinnamon – 1/4 cup milk – 1/2 tsp lemon juice
Roll – 1/2″ thick – refrigerate for 15-20 mnts. – Punch out donuts 2-3 inches wide.
Deep Fry – Hot Oil 60-90 seconds each side – Sprinkle cinnamon sugar while still warm.

Parsley Chutney Rava Dosa
Mix – 1/2 Cup Rice Powder – 1/2 Cup Semolina – 1/4 Cup All Purpose Flour- 1 chopped Onion – 1/2 tsp Salt – +/-2 cups water – Rest 30 mnts
Soak – Marble Size Tamrind – 1/2 Cup Hot water- 10 mnts – Extract Tamarind Juice
Grind – 1/2 Cup Each – Peanuts – Parsley – Grated Coconut – 1/2 Small Onion – 1/2 tsp. each – Chilli Powder – Ginger Powder – Tamarind Juice – Chutney
Heat – Grease Pan – Spread Batter – Drizzle Oil – Flip to cook both Sides – Low Flame. – Dosa Ready.
Serve Hot Dosas with Chutney and Sambar for Breakfast or Lunch.
Note : Adjust Salt to taste. Use Dried Parsley or Coconut if preferred.

Pineapple Chicken — Finger licking Flavours
Marinate – 1 Kg Chicken – Juice 1 lemon – Salt – Pepper – 2 tbsp Oil – 1 hour – Grill till done.
Saute – 1 Onion – 1 tsp. each Minced Garlic and Ginger – 2 Bell Pepper – 3/4 cup chopped Pineapplle – in Oil
Sauce- Blend 1/4 cup Pineapple – 1/4 cup Orange juice – 1 tsp. each Salt – Sugar and Chilli flakes – 1 tbsp. Corn Starch add to Saute. Simmer 3-4 mnts.
Serve – Grilled Chicken with Sauce – Garnished with Coriander leaves.

Nadan Kerala Style Beef Cutlets
Microwave – 3-4 medium Potatoes – +/- 8 mnts. – Till Soft – Peel and Mash Roughly
Chop – 1 big Onion – 1″ pc Ginger – 2 Green Chilli – 3 cloves Garlic – handful Curry Leaves – Small Pcs.
Spices – 1 tsp. Garam Masala – 1/2 tsp Pepper – 1/2 tsp Turmeric – Powders Mixed
Cook – 1/2 Kg. Ground Beef – 1/4 cup Water – 1 tsp. Salt – Spices – Stir well – cook till Dry.
Add – Chopped items – 1tsp. Oil (optional) – Stir fry – Low Flame – 5 mnts – Cool – Add Mashed Potatoes – Mix – Form Tight Balls – Even size – in Desired shape.
Fry – Beat 1 Egg – Dip Cutlets – Roll in Bread Crumbs – Deep Fry both sides in Hot Oil.
Serve Delicious Beef Cutlets Hot with Tomato Sauce and Salad.
Note – Adjust Spices to taste. Boil Potatoes instead of Microwave if preferred.

Oven Roasted Cauliflower Florets
Preheat – Oven 200°C
Cut- 1 Head Cauliflower – in florets Mince – 4-5 cloves Garlic
Drizzle – 2 tbsp. Olive Oil – 1 tablespoon Lemon Juice
Mix – Handful Parsley – 1 tsp. Turmeric Powder – Salt and Peper to taste.
Toss – in Roasting Pan – Spread Single Layer – 25-30 mnts until Slightly Brown.
Serve Hot.
Note – Use Rosemary instead of Parsley. Sprinkle Garam Masala for additional flavour.

Microwave – Sweetened condensed milk – Chocolate – +/- 1 Mnt. – till melted
Stir – Vanilla Extract – Toasted Coconut and Sliced Almonds.
Slice – Pour fudge into pan and smooth. Sprinkle Sea salt (optional). cut in squares

Christmas Fruit Cake
Preheat – Oven 165 Degree C
Boil – 2 cups Pineapple Juice – 2 Cups Sugar – 2 Cup raisins – 1tsp Salt- 1 tsp. Cinnamon – 1 tsp. Vanilla Flavoring – 2-3 mins – turn Off Stove
Mix – 4 tsp. Cocoa Powder – 4 Cups Flour – 150g Butter – 2 tsp. Baking Soda – 1 Cup Chopped mixed nuts – Stir in Boiled Mixture – Combine well.
Bake – Pour in well lined baking Pan – +/- 50 mins – Till done.
Cool before cutting.
