Konju Varuthathu - Prawn Masala Kerala Style

Chop –  3 Onions  –  1 Inch pc Ginger  – 5 cloves Garlic –  1 Green Bell Pepper — 2 tomatoes
Peel – 1/2  kg prawns peeled and deveined
Spice  – 2 tsp. Chilli Powder – 1/2 tsp. Turmeric Powder – 1/2 tsp. Coriander Powder – 1/2 tsp Pepper Powder – 1 tsp. Salt
Saute –  Heat Pan – 2 tbsp. Coconut Oil –   Onions – Bell Pepper – Ginger – Garlic  – till translucent -3/4 mnts -Add Spices – Stir 1 mnt  –  Chopped Tomatoes – Mix
Cook – Add Prawns to above  – Mix well – Cover and cook till done – 8 – 10  mnts
Garnish – Handful Cherry Tomatoes  – Curry Leaves  – 1 tsp. Coconut Oil  – Add to cooked above – Mix – Turn off Stove
Serve Delicious Spicy Konju Varuthathu with Rice and Vegetables. Mmnm…. Delicious.
Note – Adjust Salt and Spice  to taste.   Substitute Spicy Chilly Powder with Sweet Paprika Powder.

Saag Aloo / Potato Spinach Curry

Saag Aloo Spinach Potato Curry with Chapati or Rice Recipe

Blend – Boil 1 cup water –Add 250 g Spinach – 4 mnts – Drain – Cool – Grind to Paste.

Microwave – 4 medium Potatoes – 6 mnts  –  till Soft – Peel – Cut Bite Size Pcs.

Saute – 1 tbsp. Oil – 1 chopped Onion – till translucent – Low Flame

Stir – Add to above – 1 tbsp. Dried Fenugreek Leaves (Kasuri Methi) – 1tsp. chili powder – pinch garam masala – 1 tsp. Salt – Mix well –

Boil – Add 1 cup Tomato Puree to above – Bring to Boil – Add Spinach Puree – Continue Boil – Chopped Potatoes – 1 Cup Cream – 2-3 Mnts. – Turn off Stove Done

Serve Delicous Saag Aloo with Rice or Chapati.

Note – Adjsut Salt and chili to taste. Boil Potatoes instead of Microwave.

Methi Murg – Fragrent Fenugreek Flavoured Chicken

Methi Murg - Fenugreek leaves Chicken Curry

Spices – 1tsp Garam Masala Powder – 1 1/2 tsp. Chilli Powder – 3 tsp. Coriander powder – 1 tsp. turmeric Powder

Marinate – 1/2 kg Chicken  – Bite Size pcs. –  2 tbsp. Yogurt – 1 1/2  tsp. Salt  Pinch Garam Masala –  1/2 hour or more

Saute – Heat 2tbsp. Oil – 2 Sliced Onions – 1 tsp each Ginger Garlic Paste -1-2 mnts  –   Add – 2  tbsp. Dried Kasuri Meethi Leaves – Stir –  Spices Above –  Mix well -1 tbsp. Tomato Paste – 1 mnt.

Cook – Add Marinated Chicken to Saute – Stir  – +/-2 mnt   – Add Half cup water – mix well –  Bring to Boil – Cook Covered –  low flame till done or in Preheated oven 180 deg C   –  (20-25 mnts)

Serve Fragrent Methi Murg with Chapati or Rice and Salad.   Enjoy.

Note : Adjust Salt and Spices to taste.

Chapati Aloo - Indian Flat Bread  with Potato Recipe

Chapati

Mix – 1 Cup Water -1/2 tsp. Salt – +/- 2 Cups Wheat Flour – 1 tbsp. Oil – Form Dough

Rest – Cover Dough  – leave to rest 15 mnts.

Divide – 10 equal balls.- Roll – Form  Circles

Fry – Heat Pan – Medium Flame – Fry both Sides +/-1 mnt each side – Till Done.

Potato Masala

Boil – Peal – Cube – 6 medium size boiled Potatoes

Chop – 2 Onions – 1 tomato – Handful Coriander leaves 

Spices – 1 tsp Chilli Powder -1 tsp. Coriender Powder – 1 tsp Turmeric Powder 

Fry – Heat 2 tbsp. Oil – 1 tsp. cumin Seeds – Stir – Onions – +/- 1 tsp. Salt – Fry till Translusent

Saute – Add Spices to above – Stir 1 mnt. – chopped tomato 1 mnt –  Add Potatoes – Stir Fry – 2 mnts 

Cook – 5 tbsp. Water to above – Bring to Boil – Lower Flame – Stir to Mash Potatoes Slightly – 2-3 mnts.   Done

Garnish  – Coriander Leaves.

Banana Leaf Grilled Fish Parcel - Kerala Meen Pollichathu Recipe

Marinate  – 5 Slices Fish (or whole fish) –  1 tsp. turmeric – 1/2 tsp Chilli Powder –  1/2 tsp. Salt – 1tsp lime Juice – 15 mnts.

Banana leaf  – 5 A4 size Pcs – Wash – Dry –  Hold it over medium flame to Soften –  20 seconds each – Smear coconut Oil

Chop – 1 Onion – 1 green Chilli – – 1 tomato – 1 inch Pc Ginger – 2 Cloves Garlic – Small Pcs.

Fry – 2 tbsp. Coconut Oil – Shallow Fry Marinated fish –  Both sides  – Out of pan

Saute –  Leftover Oil – Chopped items  – Pepper – salt to taste – 1 mnt

Parcel –  Oliled Banana Leaf –  Place Fried Fish –  Spread  1 tsp. Sauted Veg  around Fish – Wrap Leaf – Tie with Banana leaf String or secure with Toothpick.

Heat –  1 tbsp. Oil Skillet – Place Parcels – Cook on Low Flame – with lid  – 3-4 mnts each side. – Turn off Stove.

Delicious Kerala Style Banana Leaf  Flavoured Grilled Fish Parcel Ready  to be served.

Note : Use a  whole fish of Tilapia or similar fish  instead of Pcs.  Adjust spices and cooking time as needed.

This Recipe was shared by my uncle and cousins who lives in a Fishing Village in Kerala.   I love to visit my cousins.  Love eating fish cooked in so many different ways.  

 

 

Pudina Paneer – Homemade Minty Cottage Cheese

Home made cottage Cheese Pudina Paneer Recipe

Pudina Paneer  –  Minty Cottage Cheese

Heat – 1 Ltr. Fresh Full Milk – Bring to Boil –  1/4 Cup Lemon Juice  – 1/4 cup Yogurt – turn off Stove – rest 10 mnts  – to curdle – Cheese and Whey.

Strain –  In Colander – Thin Cloth – Pour Curdled Milk – Strain –  Gather  cheesecloth gently squeeze – remove excess Whey

Set –– Tie Cheese Cloth to form tight package – Put it on a Plate – Place a cutting Board or another plate on the Package to press down –  1 Hour –  Open Package   – Slice in 1 inch cubes – Paneer Cubes ready- Refrigerate 1 Hour.

Flavour – 1 tbsp. Mint powder – 1 tbsp. Lemon Juice – 1 tsp Salt  -1/2 chopped tomato – 1/2 tsp. turmeric powder -1/2 tsp. Pepper powder – 1 tsp. garlic Paste – 1 tbsp. Oil.

Microwave – In a Bowl  – Mix Flavour  – Microwave for 2 mnts — Add  Paneer cubes to hot Flavour  – Microwave – 2-3 mnts. – Done

Serve – Garnish with Corriander leaves   as Starters

Cheesy Bread Pizza 2 ways

Sauce –   1 tbsp. Tomato Paste – 1/2 tsp. Garlic –  Pinch of  Chilli and Salt to taste – 1 tsp. Olive Oil – Mix well

Spead – Toast 2 slices of Bread – Spread Sauce – Slice of Cheese on top – Spread Parsley

Method 1 – Microwave Toast for +/- 1 mnt – Done

Method 2 –  Heat  Skillet – Fry Toast Cheese Side down – Low flame – Press with ladle – Carefully Turn and warm the other side – Leftover cheese sticks to other side – Done

Delicious Yummy Cheesy Bread Pizza for Beakfast or Snack time.  

Note :   Use Tomato Chutney or Tapenade or Pesto as Sauce.   Sprinkle herbs of Choice. I have used Gouda Cheese for this recipe.  Use Cheese of Choice.

Prawn Dum Biryani Recipe

Biryani Rice Prawn Pilau or Pilaf

Chop – 100 gm – Cabbage  Carrots – 2-  Carrots  – 50 gm  Green peas -50 gm  Beans

Marinate  –   600g Prawns  – 1 tsp. salt – 1 tsp. Chilli Powder   –  ½ tsp  Turmeric powder – 30 mnts.

Shallow Fry  –  Heat  5 tbsp. Oil –  Marinated Prawns -5 mnts.  Drain Prawns.

Fry  –  Drained Oil –  2 pcs each – Cardamom, Cloves, Cinnamon  – 1 Cup chopped Onions –  1 Tbsp. Ginger – 2 tbsp. Garlic – Pinch Salt.

Saute –  To above – 2 tsp. Coriander Powder – 1 1/2 tsp Garam Masala powder –  Stir – Chopped Veg –  3-4 Mnts – 1 chopped Tomato – 2 mnts. – Mix with Fried Prawns. – 2 mnts. – Turn off Stove –  2 tbsp.  Ghee – Mix – Prawn Masala 

Cook – Soak  ½ kg Rice – 30 mnts –  Cook  70%  –  1 tbsp. Lemon Juice – 1tsp. Salt – Drain.

Garnish – 1 Cup each –  Coriander Leaves – Mint Leaves –

Layer –  Broad Dish – Spread a layer of Rice –  Prawn Masala -Pinch Garma Masala –  Garnish –  Repeat Layers  till  Done.

Dum –  Seal Dish with Foil  – Leave on Hot Skillet or in Hot Oven for 15 Mnts.

Delicious Prawn Biryani Ready to be Served.  Serve with Salad or Raitha or Tsatski.

Pomogranate Apple Cucumber Salad -Indian Raitha Recipe

Cucumber Raitha Apples and Pomogranet Salad Recipe

Chop – 1/2 Cucumber – 1/2 Apple – 1 Red Onion  – Small Pcs.

Deseed – 1/2 Pomogranate – Remove Skin  – Deseed

Sauce – 1 1/2  Cup Creamy Yogurt – 1 tsp. Crushed Ginger – 1 tsp Salt

Mix – Chopped Items – Pomogranate Seeds  – Mix well with Sauce

Garnish – Sprinkle handful chopped Coriander Leaves

Serve Tasty Delicious Cooling Raitha Salad with Spicy Biryani or Chapati or Naan.  Or just eat plain.   A cooling Salad of Summer. 

Note : Use Pineapple or Grapes instead of Apples and Pomogranate.  Use parsley instead of Coriander.   Garnish with green Chilli if  spicy version preferred.

This Salad can be made with just Cucumber and Yogurt and any spice of your choice. A recipe which compliments Spicy Indian dishes or Biryani.
