Pomogranate Apple Cucumber Salad -Indian Raitha Recipe

Cucumber Raitha Apples and Pomogranet Salad Recipe

Chop – 1/2 Cucumber – 1/2 Apple – 1 Red Onion  – Small Pcs.

Deseed – 1/2 Pomogranate – Remove Skin  – Deseed

Sauce – 1 1/2  Cup Creamy Yogurt – 1 tsp. Crushed Ginger – 1 tsp Salt

Mix – Chopped Items – Pomogranate Seeds  – Mix well with Sauce

Garnish – Sprinkle handful chopped Coriander Leaves

Serve Tasty Delicious Cooling Raitha Salad with Spicy Biryani or Chapati or Naan.  Or just eat plain.   A cooling Salad of Summer. 

Note : Use Pineapple or Grapes instead of Apples and Pomogranate.  Use parsley instead of Coriander.   Garnish with green Chilli if  spicy version preferred.

This Salad can be made with just Cucumber and Yogurt and any spice of your choice. A recipe which compliments Spicy Indian dishes or Biryani.

Tomato Chutney Topped Boiled Eggs

Boiled Eggs tomato Chutney Gojju Chapati

Boil – Boil – Peel – 6 Eggs –  Cut in two.

Chop – 3 Big Onions   Handful Curry Leaves –  Garlic  4-5 cloves.

Spice – 1 tsp. Chilli Powder –  1 tsp. Corriender Powder – 1 tsp. Turmeric Powder

Saute  – Heat Oil -1 tsp. mustard seeds –  Add Chopped items – 1-2 tsp. Salt  – Saute –  1-2 mnts.

Fry –  Add Spice Mix to Saute  -Stir  well  – 6-8  Medium Size Tomatoes Chopped – 5-6 mnts –  Medium Flame – till tomatao melts in Gravy

Topping – Top With Boiled Eggs

Serve with Chapati or Naan or Rice.  Delicious Tomato Gojju Ready.     

Note : Use herb of Choice.  Adjust Salt and Spice to Taste. 

When we were living in Mathikere Bangalore, most evenings Anto and me,   ended up at Latha and Ramesh’s Place.   

Such beautiful memories of Indian Summer evenings. Me and Latha chatting inside the house, Shruthi was so samll then, a little princess dancing around.    Anto and Ramesh  as usual outside discussing various plans and Projects and ideas.

Ramesh would come in suddenly and say – ” Lathama can you quickly make some Chappatis and Tomato Gojju with Eggs” 

Both Latha and Ramesh never allowed us to leave before sharing dinner with them.  Siddhu, this was before you were born  and Karthik,  you were then part of Princess Shruti’s dreams yet to come true.

Thank you Ramesh and Latha for welcoming us everytime we visit  India and the gifts and the parties you have organised with all our friends group.

Latha we make  Tomato Gojju atleast once  a week.    It is the most loved dish in our house.  We eat it with Breakfast Lunch and Dinner!!

Tangy Tomato Gojju or Tomato Chutney Quick Delicious and Easy Recipe with Boiled Eggs

 

Aromatic Potato Dill Fry

Delicious Dill Roasted Potatoes Indian Style Recipe as Side Dish for Sunday Roast.

Boil – Peal – Cube – 6 medium size boiled Potatoes

Chop – 2 Onions – 2 Handful Dill leaves

Spices – 1 tsp Chilli Powder -1 tsp. Coriender Powder – 1 tsp Turmeric Powder – Spice Mix

Fry – Heat 2 tbsp. Oil – 1 tsp. cumin Seeds – Stir – Onions – +/- 1 tsp. Salt – Fry till Translusent

Saute – Add Spices to above – Stir 1 mnt.  Add Potatoes – Stir Fry – 2 mnts – Chopped Dill –Stir.

Cook – 5 tbsp. Water to above – Bring to Boil – Lower Flame – Stir to Mash Potatoes Slightly – 2-3 mnts.   Done

Serve Indian Style with Chapati, Puri Or Rice.   Mmm… Delicious.   The Flavours texture and aroma of this dish is amazing.

Note :  Adjust spices and Salt to taste. 

We were flooded with homegrown vegetables and herbs last sunday when Gina and Andy dropped in.  I was planning to make Pakoda with the Dill but ended up making this delicious Dill Potato.  

Delicious Dill Roasted Potatoes Indian Style Recipe as Side Dish for Sunday Roast.

Chai Latte – Indian Masala Tea

Masala Chai
Street Vendor Frothing Tea

Flavour –  Blend – 5 cardamoms – 5 Cloves – 5 sticks of Cinnamon – 1 inch pc Crushed Ginger – Coarse Spice Blend.

Heat – 3 cups Water – 2 Cups Milk – Bring to Boil

Brew – 1 1/2 tbsp. Black Tea Leaf/ powder – Spice Blend – Add to above – Continue boiling for 3- 4 mnts – low flame – Turn of Stove.

Sweeten – Add 3 tbsp. Sugar to above – Stir gently.

Froth – Pour Hot tea from one cup to another at some height to form forth. Traditional Indian Street Vendor Style.

Note :  Change quantity of Milk / Tea Powder to taste.    Use Just Cardomoms or Ginger to flavour Tea.   Adjust Sugar to taste.

Tea is said to have a Cooling effect on the Body during summer months.

Enjoy Delicious Indian Masala Chai with Spicy Savoury Snacks.  Mmmm…..

 

 

 

 

 

Sambar – Luscious Veg Lentil Soup

SOUTH INDIAN SAMBAR RECIPE

Soak – Squeeze – Strain- Lemon-sized ball  tamarind – 2 cups Hot Water – 15 mints  – Extract Tamrind Juice.

Boil – 100g Toor Dal (Lentil)  – 1/2 tsp. Turmeric – 2-3 cups Water – Till Soft –  Cooked Dal

Chop –  Aubergine – Pumpkin –  Zucchini – Tomatoes – Carrots  – 3 cups Total – Bitesize Pieces – Mixed Veg

Cook – Mixed Veg – in Tamrind Juice – 2 -3 tsp. Sambar Powder -1/2 tsp.  Salt +/- 2 tsp – 20-25 mnts – Till done – Add Cooked Dal  –  Simmer  5 minutes.  – Done – Turn Off Stove.

Seasoning – Heat 2 tsp. Oil –  Add 1/2 tsp. Mustard – 1/2 tsp Fenugreek Seeds (optional) – 2 Dried Red Chillies – 1 mnt  – Add to Above.

Garnish  – With Corriender Leaves.

Serve – Sambar with Rice or  Dosa (Indian Pancake)

Delicious Sambar Ready.  Mmmm…. 

Note :  Add salt to taste.   Veg of Choice. Sambar Powder can be found in Indian Stores.

Everytime I visit India, my Friend Lakshmi  says I do not spend enough time with her.  So, this visit  I decided to meet her at the Airport and share the long ride home with her and go out to dinner before going home to family.

However, arriving at her home  to freshen up, Lakshmi’s Husband Murali insisted that I stay for dinner and he was going to make a Special Sambar  with Dosa for me.  This is the Sambar he made for Dinner that evening.   So Delicious and Different from how we make at home.  

Everytime I visit Lakshmi, she reminds her Son Arjun that I was with her at the Hospital when he was Born. She reminds Arjun about me every year for his Birthday too.  

Lakshmi, Murali and Arjun thank you for your Friendship and hospitality.   I enjoyed dinner once again at your place.

Sambar Spelt Saambaar, Sambhar or Sambaar,is a Lentil based vegetable Stew  from Tamil Nadu  and Karnataka in South India. A healthy tasty dish to include in all diets.

 

Tomato Salad Cups 2 Ways

Appetizer Recipe  for Party

Salad cups

Cups –  Tomatoes Wash  and Wipe – Cut in Half – Scoop Seeds Out.

Palm Heart Filling  – 1 Boiled Potato  -1 cup Marinated Palm Hearts – Garlic to taste  – tbsp. Mayonnaise  – Blend to form Puree

Avacado Filling  – 1 ripe Avacado mashed – 1 small Onion chopped – Juice 1/2 lemon – Salt – Pepper to taste –  Mix  –  Guacamole

Serve – Fill Tomato cups with  Palm Heart Filling – Or  Guacamole

Garnish – Basil Leaf Or Corriander

Enjoy Delicious Salad cups as Appetizer for Party.   Or Use fillings as Sandwich Spread!! Mmmm…..

Note :  Palm Heart can be found in Jars in the Supermarket in Belgium. Cut edges of Tomato cups if shaky.

Oats Dates Bites – Oats Ladoo

Quick and Easy Bite for Snack Time

Roast – 1 cup Oats – 1 cup Peanut  – +/- 2mnts – Grind to coarse powder

Flavour – 1 tsp Cinnamon Powder – 1 cup chopped Soft Dates – 1 tbsp Butter + 1 tbsp Honey – Grind to smooth paste

Garnish – 1/2 cup Sunflower + Pumpkin Seeds – 1/2 Cup raisons  /  dry Berries – Roasted – +/- 1 mnt.

Mix – Roasted powder – Flavour paste and Garnish

Spread – evenly on a plate and cut to desired shape – Or shape into balls to make Ladoos.

Quick and Easy Bites ready for Snack time or on the go.  mmm…. enjoy

Note : Use Jaggery or Sugar powder instead of Honey.   Change Garnish to Coconut or Almond.  Enjoy.

 

Carrot Corn Karabath – Savoury Smooth Semolina

Chop – 1 Onion – 2 Carrot  – 2 red Chilli

Season  – Heat pan – 1 Tbsp. Ghee  – 1 tsp mustard – 1 tsp. 1 white Lentil –  Handful Cashew – Handful curry leaves.

Saute –  1 Cup Semolina  in above – 3 mnts – Chopped items+ 1 cup corn – 1 tsp Salt – tsp turmeric – 1 chopped Tomato – 3 mnts

Cook – 2 cups boiling water to Saute – Few mnts till water absorbed – gooey consitancy.  – Turn off stove.

Serve – Ladle in a cup – Cool a bit –  turn over on a plate!!

Delicious Soft Savour Semolina Ready to eat.  Eat for  Breakfast as is.  Or serve with a Roast for dinner and Salad.   mmm….

Note :  Add Oil instead of ghee.   Use Parsley instead of Curry leaves.

Seasoned Seaweed Snack – Japanese Seaweed Indian Way

Chop –  1 Onion – 2 Fresh long Red Chilli

Mix – Chopped Onion Chilli  – 1 Cup  Dried Wakame Seaweed – 1 cup Chickpeas Flour- 1 tsp. Salt

Batter – +/-  1/2 water  mix to above – Dry Dropping consitstancy

Fry –  Drop spoonful – Hot oil – Turn and Fry both sides.

Drain –  Hot Snack on Paper towel

Delicious Seaweed  Snack ready.  Crispy Spicy Yummy!!  Enjoy.

Note :   Substitute Red chilly with Sweet Pepper.

I love Seaweed.  This recipe is another way to enjoy Japanese Seaweed Indian Way.

Erissery – Brown Beans Banana Curry

Easy Vegetarian Kerala Recipe

Chop –  1/4 kg Yam – 1 Raw Plaintain – Scrape outer sink only – Chop in Chunks

Grind – 1 cup Fresh Grated coconut  – Rough paste.

Fry – 1 tbsp Coconut Oil – 1/2 tsp. Mustard – 1 tsp. cumin seeds – 2 dry  red chilli – handful Curry Leaves – 1/2 cup dry coconut – till  Golden Brown.  Fried Coconut Garnish.

Cook –  Soak overnight – Cook  – 1 cup Dried Brown Beans (cow peas) – until soft

Add –  to above – Chopped items – 1 tsp. turmeric – 1 tsp. Pepper –  water as needed – Salt to taste – few mnts.  till veg well cooked.

Mix –  Coconut paste to cooked items – Bring to Boil – Turn off Stove

Garnish  –  With  Fried Coconut Garnish.  Mix.

Enjoy delicious Erissery !! mmm…. Mouth watering!!   Eat with Rice. Or with Rice and Aviyal or Eat just Erissery.

Note : Use Pumkin instead of  Yam. Dried Green Beans instead of Brown beans.

Tony Achan’s visit to Leuven has inspired this recipe.    When he was studying in Leuven he was an experimental cook.   He re-introduced this dish in the Leuven community. He is a Bishop in Kerala now.  He was a big part of  Sarah and Tina’s childhood.

This dish was made by my mom about twice a year for Onam and  Good Friday.   I loved it so much that I ate it for Lunch, Dinner and Breakfast the next day.
