Motta Curry – Creamy Coconut Egg Curry

Chop – 2 Onion – 1 Green Chilli – 1 inch pc Ginger  – handful curry leaves

Boil – 5 Eggs – Peel – Make a few slits

Spice –  1tsp. Pepper – 1tsp Chilli Powder – 1 tbsp Corriender Powder-  Spice Mix

Saute – 1 tbsp Coconut Oil -Green Chilli – Onions -Ginger-   until translucent – 2-3 mnts

Sauce – Add Spice to Saute – 1 mnt – mix well – 1 tbsp Vinigar – 1-2 tsp Salt-1 mnt  – 1/2 cup water bring to boil – 1 cup Coconut Milk  – 5 mnts – Add eggs to Boiling sauce – turn off stove.

Serve – Creamy Coconut Egg Curry with Rice or Bread or Appam or Chapati

Note :  Add Salt to taste.    Add Chopped boiled Potatoes to the sauce if you like.  

Delicious Easy Tasty Egg Curry.   Mmmm….. A quick Curry for weeknight dinner.
